🌿  Winter savory is a compact, semi‑evergreen perennial native to the Mediterranean, forming a tidy mound of narrow, glossy dark‑green leaves with a warm, peppery aroma. Unlike its softer annual cousin, summer savory, this species is woody, long‑lived, and fully hardy, offering year‑round structure and flavour in the herb garden.
In summer it produces dense clusters of white flowers, which are highly attractive to bees and other beneficial insects. Its neat form and drought tolerance make it ideal for sunny borders, gravel gardens, and herb planters.

Winter savory has a flavour of a peppery mix of thyme and oregano, giving dishes depth and warmth without overpowering them.


•     Excellent with beans, lentils, pulses, and hearty vegetable dishes.
•     A traditional partner for sausages, poultry, pork, and game.
•     Adds depth to stuffings, marinades, slow‑cooked stews, and roasted vegetables.
