Savory Winter
Winter Savory is like a bundle of herbs, flavours resembling oregano and thyme with a peppery kick. When added to dishes it can enhance flavour without the addition of salt or pepper helping reduce the amount of salt used in cooking.
It is a low growing semi-evergreen perennial flowering in summer with a mass of white flowers loved by pollinators.
Savoury 'Winter' is one of our favourite herbs, perfect with all dishes containing beans but works just as well with vegetables such as potatoes and mushrooms, tomatoes, or vegetable soups, especially those containing pulses.
It is also great cooked with meat such as pork or beef in roasts and stews, or chicken and turkey rubbed on the skin or used as a stuffing ingredient. Alternatively, try finely chopping the leaves and adding to a salad to give it a boost of flavour.
