🌿 Sage ‘Elephant Ear’ (Salvia officinalis – large‑leaf form)
A vigorous, aromatic perennial with exceptionally large leaves and rich savoury flavour

Sage ‘Elephant Ear’ is a large, vigorous form of culinary sage, grown for its broad, soft, grey‑green leaves and deep, resinous aroma. It forms a substantial, evergreen mound typically 50–100 cm tall and wide, giving it real presence in the herb garden.
Unlike many sages, this variety does not flower, focusing its energy instead on producing abundant, high‑quality foliage — one of the reasons it’s considered one of the finest culinary sages available.

This sage has a warm, earthy, savoury flavour that stands up beautifully to cooking, and its large leaves make it especially versatile.

•     Excellent with pork, poultry, sausages, and dairy‑based dishes.

•     A classic herb for stuffings, slow‑cooked meals, and roasted vegetables.

•     Large leaves are ideal for frying whole until crisp — a traditional Italian preparation.

•     Works beautifully with beans and pulses, adding depth and warmth.

•     Its naturally strong savoury character can reduce the amount of salt needed in a dish.

Flavour profile: warm, resinous, earthy, deeply aromatic.
