Bronze Fennel is a superb hardy perennial herb that produces beautiful bronze coloured feathery foliage making it a structural beauty in the garden. In summer the plant is covered in pollen rich, pretty yellow flowers that are enjoyed by hoverflies, lacewings and more. Every part of the plant, seeds, foliage and pollen, has a delightful aniseed scent and flavour that pairs particularly well with white fish, pork and mixed salads.

A very versatile culinary herb. Fresh shoots can be used in salads, to flavour sauces and particularly good with fresh fish. Flowers are edible and work well with boiled chestnuts, oven cooked and pan fried mushrooms, and pork. Seeds have a stronger aniseed flavour that works very well with fatty cuts of pork such as pork belly, simply crush the seed in a pestle and mortar and rub onto the meat along side other herbs such as sage, rosemary and garlic. Also seeds are used to flavour sweet baked goods
